|Culinary Origins ​

Born in the historic city of Madrid, Spain, Chef Jonatan Motos Ferrán grew up in a warm, culturally rich family environment. His earliest culinary inspiration came from time spent in his grandmother’s kitchen, where he learned the foundations of traditional Spanish cuisine. These formative experiences sharpened his palate and sparked a passion for food that would lay the groundwork for his future in the culinary arts. 

|Professional Journey 

Chef Jonatan began his culinary journey in 2005, gaining valuable experience in several restaurants in Tenerife, Spain.   

 

His internship with the Ixo Group, under the consultancy of two-Michelin-starred Chef Andoni Luis Aduriz, profoundly reshaped his perspective on gastronomy. This transformative experience sparked his passion for culinary innovation and artistry, laying the foundation for his visionary approach to the culinary world.   

 

His culinary journey has taken him across Asia, Latin America, Europe, and the Middle East, including destinations such as Spain, Mexico, China, the UK, including London, Qatar, the United Arab Emirates, and Taiwan. Along the way, he has cultivated a profound appreciation for regional ingredients and draws inspiration from the rich history and culture of each location reflecting his deep connection to the culinary heritage of each region.   

 

Among the most influential experiences in Jonatan's career were the two years he spent working with Chef Ángel Palacios, a Michelin-starred chef from Barcelona. Chef Palacios honed his craft in some of the world’s most prestigious culinary institutions, including the legendary El Bulli, the three-Michelin-starred Martín Berasategui in San Sebastián, and earned his own Michelin star at La Broche.  

Under his mentorship, Jonatan acquired a deep understanding of Spanish cuisine and mastered the art of harmonizing tradition with modern techniques — an experience that became a foundational element of his culinary identity.   

 

During his time in the UAE, Jonatan’s leadership earned the restaurant Celebrities by Mauro Colagreco two Michelin Guide recommendations. In 2023, he was named one of the “Top 5 Chefs” by Gault & Millau UAE , a major milestone affirming his excellence in the world of haute cuisine.

|Culinary Style & Present Role

Chef Jonatan’s style highlights the purity of ingredients, enhancing traditional flavors through modern techniques. His meticulous attention to visual presentation, texture, and temperature ensures each dish is crafted to perfection. He prioritizes seasonal, locally sourced produce, and his cuisine seamlessly bridges Asian and European influences with a strong cultural narrative. 

Among all his travels, Mexico holds a unique place in his heart. Its rich history and enduring traditional cooking methods continue to inspire him to infuse cultural depth and storytelling into his dishes, always with deep respect for heritage. 

Now serving as Executive Chef of YMS by onefifteen, Jonatan is embarking on a new chapter in collaboration with the brand. Captivated by the natural beauty and historical richness of Yangmingshan, he is committed to creating exceptional dining experiences rooted in local ingredients and culinary passion. With a focus on innovation and excellence, he aims to lead YMS to the forefront of Taiwan’s culinary landscape and earn continued recognition from within the industry.
